- For medium: Sear for 2 minutes on each side, then move to indirect heat and cook for an additional 8-9 minutes.

Step 6: Checking Doneness

Using an instant-read meat thermometer is highly recommended to achieve your desired level of doneness:

- Rare (125°F/52°C): A cool red center with a tender texture.
- Medium-Rare (135°F/57°C): A warm red center with a perfect balance of tenderness and juiciness.
- Medium (145°F/63°C): A warm pink center that is firmer but still moist.
Note: It is essential not to cut into your steak during grilling as it releases juices. Use the instant-read thermometer instead.

Step 7: Resting Your Steak

Once you have achieved your desired level of doneness, remove your steak from the grill and let it rest on a cutting board or plate tented with foil. This allows the juices to redistribute within the meat, resulting in a more flavorful bite. Let it rest for approximately five minutes.
